What you need:
2 cups old-fashioned oats
1 cup sweetened shredded coconut
2-1/2 cups chopped walnuts
1 cup dried cranberries
1/2 cup chopped dried apricots
2/3 cup honey
1/4 cup firmly packed light brown sugar
1-1/2 tsp. vanilla extract
3/4 tsp. salt
1/3 cup Country Crock® Cinnamon Spread
What you need to do:
Preheat oven to 350°. Spray 13- x 9-inch baking pan with nonstick cooking spray; set aside.
Combine oats with coconut on baking sheet. Bake 12 minutes or until lightly toasted, stirring occasionally; cool completely. decrease oven to 300°.
Toss walnuts, cranberries and apricots with oatmeal mixture in large bowl; set aside.
Bring honey, brown sugar, vanilla and salt to a boil over medium heat in 1-quart saucepan; boil 1 minute. Remove from heat, then stir in Country Crock® Cinnamon Spread until melted. Pour hot honey mixture over oatmeal mixture; stir to coat. Press mixture into prepared pan.
Bake 25 minutes or until lightly golden. Cool completely on wire rack. Cut into 1-1/2- x 2-1/2-inch bars.
TIP: Try using your favorite nuts instead of walnuts.
