Smashed Potatoes With Golden Beets

What You Need

4 medium russet or Yukon Gold potatoes (about 2 lbs.), peeled and cut into 1/2-in. diced pieces
2 large or 4 medium golden beets (about 1 lb.), peeled and cut into 1/2-in. diced pieces
2 cups whole milk
2 cloves garlic, peeled and halved
1 tsp. kosher salt or 1 1/2 tsp. table salt
4 tsp. I Can’t Believe It’s Not Butter!® Spread

What You Need To Do

Preheat oven to 375°. Put potatoes, beets, milk, garlic and salt in large ovenproof saucepan. Bring to a simmer over medium-high heat. Cover with lid and bake until potatoes and beets are tender, about 30 minutes.

Remove from oven with oven mitt. Mash potatoes and beets; stir in I Can’t Believe It’s Not Butter!® Spread.
